Oat and Mocha Ice Cream Sandwich

This is my recipe for an Oat and Mocha Ice Cream Sandwich. It all starts with Canadian canola oil, brown sugar and granulated white sugar. I like to use my hand mixer to beat everything just until it looks like wet sand. That I’ll add an egg and vanilla extract. Next up are my dry ingredients. I’ll add all-purpose flour, cinnamon, salt, baking soda and of course large flake oats.

I like to portion my cookie dough out by generous tablespoon amounts and then using a damp hand, I’ll press the cookie dough down just so you end up with a nice flat cookie. They go into a 325-degree oven for 12 minutes. Once they’re cool you can start topping them with the ice cream flavour of your choice. I like vanilla.

Simply sandwich them together and then wrap individually and place in the freezer for about 15 minutes to chill. While they’re chilling, we’re going to make a delicious mocha chocolate sauce complete with chocolate, espresso powder and a little bit more canola. The frozen ice cream sandwiches go for a dip and then get frozen for another hour then they’re ready to enjoy.
